Bakery caters to pervasive allergy

MIAMISBURG — Sinfully Gluten-Free, a bakery and restaurant whose entire menu is devoid of the wheat and grain-based protein gluten, will have its grand opening on Tuesday, July 15.
Co-owned by Dayton native Heather Zook and her mother, Barbara Moran, the bakery makes an assortment of cakes, brownies, breads, and even pizza, all free of gluten.
Zook, whose husband is allergic to gluten, and whose aunt was diagnosed with Celiac's Disease ( a more severe form of gluten intolerance that can have long-term health effects) said she started the business after being frustrated with the lack of tasteful alternatives to foods containing gluten. She referred to her mother as the genius behind the recipes.
"This is home-cooked baked goods, like your grandma or great-grandma used to make. But gluten free," Zook said.
Sinfully Gluten-Free is the only gluten free bakery or restaurant in the tri-state area, Zook said, and possibly the only one in the Midwest.
