Violations: Food employee(s) were not washing hands in an approved handwashing sink or automatic handwashing facility. Chef washed hands in the food preparation sink. Corrected. Informed chef that hands must be washed in the hand washing sink only. To prevent contamination, food employees shall clean their hands in a handwashing sink or approved automatic handwashing facility and may not clean their hands in a sink used for food prep or warewashing, or in a curbed cleaning facility used for the disposal of mop water and similar liquid waste.

The concentration and/or temperature of a chlorine sanitizing solution did not meet the minimum requirements specified in the code. 0 ppm chlorine in the dish machine. To prevent pathogen growth, a chlorine solution shall have a minimum temperature based on the concentration and pH of the solution as specified in the code.

Handwashing sink is being used for purposes other than handwashing. Mop heads (clean) stored at the hand washing sink. Corrected. Mop heads moved during the inspection. To prevent contamination, a handwashing sink may not be used for purposes other than handwashing.

Observed improper storage of food items. Boxes of food stored on the floor of the walk-in freezer and refrigerator. Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.

Observed no supply of hand cleaning liquid, powder or bar soap at the handwashing sink(s). To ensure proper cleaning of hands, each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap.

Observed no towels or hand drying device at the handwashing sink(s). To prevent contamination by hands, each handwashing sink or group of adjacent handwashing sinks shall be provided with: Individual, disposable towels; a continuous towel system that supplies the user with a clean towel; a heated-air hand drying device; or a hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures.

Observed soap and towels for handwashing at the food preparation sink, utensil washing sink, or the service sink. Soap and paper towels were at the food preparation sink. Corrected. Removed and taken to the hand washing sink during the inspection. A sink used for food preparation or utensil washing, or a service sink or curbed cleaning facility used for the disposal of mop water or similar wastes, may not be provided with handwashing aids and devices required for a handwashing sink.

Comments: Facility has called GFS to come repair dish machine. You may use the dish machine to wash and rinse, but you must sanitize in the three compartment sink.
