Violations/comments: Observed raw chicken stored above onions/mushrooms in cooler under grill. Store raw meats below foods that are not cooked to as high of temperature to prevent possible cross contamination. Observed bulk food containers without labels. All food items that are not unmistakable must be labeled to prevent misuse. Observed beef thawing in stagnant water. This is not safe way to thaw. Only thaw in refrigerator, in running draining water, in cooking process. Observed ready to eat TCS foods, i.e., cut tomatoes, sour cream, etc. without dates. Must date TCS foods with the date opened or made. Discard after seven days. Refried beans cooling in walk in at 50 degrees. They were made previous day. Cooling must occur fast. Cool from 135 to 70 degrees in two hours and 70 to 41 degrees in four hours. Containers were too full and stacked on top of each other. Use shallow pans and space out while cooling.
