Violations/comments: On the floor below the fruit and vegetable holding shelves, six open boxes of bananas were discovered. To prevent contamination, place the boxes at least six inches off the floor. In the walk-in cold holding units, the compressor fans were observed covered with an absorbent type of filter cover. Critical violation: in the Philadelphia Cream Cheese reach-in cooler next to the milk bunker, the following items were observed holding at 56F: shredded parmesan cheese, shredded sharp cheddar cheese, shredded mild cheddar cheese. To limit microbial growth, all time-temperature controlled for safety food shall be maintained at or below 41 F. The food items were discarded. The donuts in the case were improperly labeled. The shelving unites in the deli walk-in cooler were observed with rust build up. In the deli area, a noncommercial or household microwave was observed. The deli walk-in cooler door gasket was observed in disrepair. Critical violation: in the deli area, the bread slicer was observed with food debris build up. In the bakery storage area, food debris was observed on the cart shelves. Deli area utensil storage drawers had food build up. In the deli and raw meat walk-in coolers, a mold-like substance was observed on the walls and ceilings. Critical violation: fruit flies were observed on the fruit and vegetable sales floor and in the donut case.
