Health Inspections: Rally’s

Violations: Inside of the ice machine ice bin have a drink bottle being cooled by the ready to eat ice. Ice cannot be used as a coolant and an ingredient to prevent contamination of the ready to eat ice. Drink container moved to the walk in refrigerator. Removed ice from area where drink was being cooled. Corrected.

Thawing bag of meat at the three compartment sink in container of stagnant water. Use approved method for thawing, including under refrigeration or in container with cold running water.

Have lettuce and sliced tomatoes that have been removed from cold holding with no time stamps. Time stamp foods for four hours past time removed from refrigeration for disposal when using time in lieu of temperature. Added time stamps during the inspection and corrected.

Using quaternary ammonia sanitizer for three compartment sink and sanitizer buckets. Have a chlorine test kit on site. Ensure have proper testing kit to verify correct concentration of sanitizer. Checked and between 200ppm and 400ppm at the time of the inspection.

At the exhaust hoods the filters have excess build up of debris. Clean the filters and then as needed to prevent excessive build up of debris and allowing for exhausting of fumes/limiting fuel build up.

Floor under drink dispensers by drive thru windows and the walk in freezer have excessive build up of debris. Clean area and then as needed to prevent excessive build up which could encourage pests.

Comments: General manager has taken Servsafe course and waiting for certificate.
