We’re guessing that what many moms want on Mother’s Day (this Sunday) is to
catch up on some sleep and, well, just relax.
For those who choose to spend the special day at home, here are two ideas for
quick, simple dishes the whole family can prepare together.
Erin Chase, founder of 5DollarDinners.com
and OneDishDinners.com and
author of “The $5 Dinner Mom” cookbooks, shares a way to dress up a
breakfast staple — oatmeal. Chase also is a Savings Nations Workshop
Instructor, sharing the best tips, tricks and deals at the grocery store.
She lives in Centerville, with her husband and three boys.
First Watch, which has about 100 locations nationwide including three
Dayton-area locations and several Cincinnati locations including West
Chester, shares the recipe for one of its signature items, The Siesta Key
Cocktail.
“It’s an item that is very simple to prepare, certainly an item that could
easily be made by a child for their mother, for a nice Mother’s Day
breakfast-in-bed surprise,” said Shane Whiteman, senior manager, Kettering
location.
The recipes:
Strawberry Rhubarb Baked Oatmeal
Ingredients
2 cups diced rhubarb
3 cups diced strawberries
2 large eggs
1/4 cup applesauce
1/4 cup canola or vegetable oil
1/2 cup sugar
1 1/2 cups milk
3 cups quick cooking oats
1/2 cup wheat flour
2 tsp baking powder
1 tsp salt
1/4 - 1/2 cup brown sugar, for sprinkling
Directions
Preheat the oven to 350. Spray a 9x13 baking dish with nonstick cooking spray.
Toss the rhubarb and strawberries in the baking dish.
In a mixing bowl, whisk together the remaining ingredients, except the brown
sugar. Pour the batter over top of the fruit and stir gently to combine the
fruit.
Sprinkle the brown sugar over the top.
Bake in the preheated oven for 25 to 30 minutes, or until a toothpick comes
out clean in the middle.
Serve Strawberry Rhubarb Baked Oatmeal with milk, cream, yogurt.
