Comments: Dish machine was dispensing less than 10 ppm chlorine in rinse cycle. PUIC indicated dishes will be washed and manually sanitized until dishmachine has been repaired.

Observed grill employee handling raw meat and changing tasks with no hand wash and no removal of blue gloves.

Mold in corner of wall near warewashing sink, grease and food debris on floor under cookline equipment.

Egg residue on cooking mold stored on clean dish cart.

Labels observed on pans on clean dish cart, grease accumulation on cooking equipment.

Found faucet at hand sink near grill leaking water when faucet is turned on.

Dish machine is occasionally switched to hot water sanitize when chemical sanitizing mode does not properly function. Temperature gauge on dish machine is not properly functioning.

Comments: Found rice utensils stored in a container of room temperature water.

Found ice scoop stored with handle in the ice.

Found cups in the rice bin instead of a scoop with a handle.

Found not enough light in the back hallway by the walk-in cooler door.

Found screw drivers stored next to ice scoop for the ice machine.

Found floor drain unclean to the ice machine.

Found walls and ceiling around the ansul system dusty.

Found walls in the 3-compartment sink area dusty.

Found floor under the server make table unclean.

Found unclean drain line to the ice machine.

Found gloves used for cleaning stored on an open box of dried noodles.

Found seasoning cart in front of wok with foil on it.

Found foil lining the top of the microwave.

Found a towel lining the shelf under the blender.

Found open drinking cups in the kitchen and in the server area. Must have lids.

Found damaged handle on rolling pin.

Found grease build up on sides of equipment under hood, refrigerators.

Found missing end caps on light bulbs above dishwasher.

Found missing bulbs in fixture in prep area.

Found damaged floor tiles in prep area.

Comments: Sliced tomatoes (47 degrees F) corn (45 degrees F).

Dishmachine not dispensing sanitizer, quat sanitizer was over 400 ppm.

Hot water in women’s and men’s restrooms was at 145 degrees F.

Multi-use pans wet nested.

Labels on multi-use pans stored as clean, food residue on shelving in bakery walk-in cooler.
