Groundbreaking for Carillon Brewing Company

Dayton History will break ground on its 19th Century-themed Carillon Brewing Company building at 2 p.m. Monday, March 18, at Carillon Historical Park at 1000 Carillon Blvd. The event is open to the public.

The project’s design has changed slightly since it was first announced last July, in part because an unexpectedly high water table made it impossible to construct a basement for the structure. The brewery’s initial projected opening has been pushed back from December 2013 to March 2014, and the project’s cost has risen slightly, to about $3.5 million, according to Brady Kress, president and CEO of Dayton History.

The brewery will use historic tools and techniques that date back to 1850, and will feature costumed interpreters who will demonstrate the historic processes used to produce beer, wine, cider, and cheese. Visitors will be able to sample the results in daily tastings. A full commercial kitchen is now a part of the revised plan, which will make a wider variety of food available to visitors, Kress said.

The brewery venue, which will accommodate 250 visitors, will link parking lots near Carillon Tower with the area used for outdoor festivals, Kress said. It also will be available for meetings and community gatherings and is expected to attract new audiences to Dayton and to the park.

“We are very eager to get started on this unique addition to the Carillon Park campus,” Kress said. “Once completed, this museum facility will be the only one of its kind in the United States.”
