SNEAK PEEK inside the new Mudlick Tap House in Dayton

Downtown Dayton's newest gastropub and restaurant is shooting for a mid-April opening and will conduct a hiring event later this month to help fill 40 new jobs.

Mudlick Tap House — which also operates a pub in Germantown — has spent the last six months renovating the former Club Aquarius space at 135 E. Second St. The hiring event will take place on-site from 12:30 p.m. to 7 p.m. on March 27. An application is available online on the pub's web site, mudlickdayton.com.

Mudlick co-founder Jennifer Dean told this news outlet Tuesday during a tour of the pub that she and fellow co-founder Forrest Williams are encouraged by the residential and commercial development going on around their new business. The owners have gotten several inquiries from downtown Dayton residents who are eagerly anticipating Mudlick’s opening.

“We’re excited to be downtown — the growth here is phenomenal right now,” Dean said.

Dean and her management staff will start training new employees in early April, and plans call for Mudlick Tap House to host some invitation-only soft-open events in conjunction with local non-profit agencies prior to opening its doors to the public in mid-April.

After it opens, the beer pub’s hours will be 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 11 p.m. Friday and Saturday, and 10 a.m. to 4 p.m. Sunday.

A Bloody Mary bar will be offered on weekends. For the first six weeks after opening, the regular lunch menu will be served during the day on weekends, but plans call for adding a full brunch menu later in the spring.

Mudlick Tap House’s Dayton location initially will occupy the first two floors of the three-story building, each floor containing about 4,500 square feet. There will be seating for about 150 combined on the two floors, Dean said.

The restaurant will offer a broad menu, all dishes made from scratch, ranging from sandwiches to entrees, with a focus on locally sourced ingredients. The tap house will have 12 beer taps, all devoted to craft beers, and will serve cocktails and wine as well.
