Warren County health inspections

The following are summaries of Ohio standard inspection reports on file from the Warren County Combined Health District, from the weeks of Nov. 7-18. District information is available online at www.wcchd.com.

Lebanon High School

1916 Drake Road, Lebanon

Date of inspection: Nov. 8

Violations: The physical facilities are not being maintained in good repair. Observed damaged cove base tile in walk in cooler near entry way. The physical facilities shall be maintained in good repair. Correct By: 31-Mar-2017.

The physical facilities are not being maintained in good repair. The cold water faucet is not operational on hand sink near fryer. The physical facilities shall be maintained in good repair. Correct By: 31-Mar-2017.

Comments: The food temperatures checked were within required parameters. Good job!

Steak-N-Shake

5308 Fields-Ertel Road, Cincinnati

Date of inspection: Nov. 8

Violations: Observed improper reheating of food for hot holding. Container of chili (cooled from previous night) sitting out without being properly heated. Chili discarded. To prevent the growth of pathogens, time and temperature controlled for safety (TCS) food that is cooked, cooled and reheated for hot holding shall be reheated as required by this rule.

Person-in-charge did not ensure that the facility has written procedures for employees to follow when responding to vomiting or diarrheal events. Person in charge shall ensure that the FSO or RFE have written procedures for employees to follow when responding to vomiting or diarrheal events that involved discharge onto surfaces.

Observed accumulation of soil residue on nonfood-contact surfaces. Ice cream/milkshake cooler has buildup. Bulk milk machine, milkshake spindles machines have buildup. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Cleaned equipment and utensils, laundered linens, or single-service and single-use articles are not properly stored. Food contact gloves stored on shelf beside chemicals. Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule.

Comments: Physical facilities have improved in cleaning since last inspection. Good job.

Wendy’s

Violations: Person-in-charge did not ensure that the facility has written procedures for employees to follow when responding to vomiting or diarrheal events. Person in charge shall ensure that the FSO or RFE have written procedures for employees to follow when responding to vomiting or diarrheal events that involved discharge onto surfaces.

Cold or hot holding equipment did not contain a thermometer, or the thermometer was not correctly placed. Drive thru cooler and walk in cooler without thermometer. A properly designed temperature measuring device as specified in this rule shall be located in the warmest part of a cooling unit or the coolest part of a food warming unit.

Comments: Facility is clean and well maintained. All temperatures within required ranges. Employees knowledgeable in proper food handling procedures. Good job.
