“Bar Granada” in downtown Dayton opened “softly” over the long Thanksgiving Day weekend with a limited menu and hours that will continue this week after the Spanish-themed tapas bar reopens for business tomorrow, Tuesday Nov. 27, co-founder Paul Pelnar said Monday.
Pelnar said he has gotten a “good response” so far, and is using the soft opening to train staff without pressure.
“We have not even announced our soft open on Facebook, so we’re just getting street traffic and rumor to find us,” the Bar Granada co-owner said. “Feedback has been encouraging.”
Hours of operation this week only will be 5 p.m. to 11 p.m., “with some additional hours on Saturday,” and 1 p.m. to 6 p.m. Sunday. Bar Granada is closed on Mondays.
A more formal grand opening is in the works for mid-December, Pelnar said.

The opening of the Spanish-themed tapas bar called “Bar Granada” on the banks of the Great Miami River in downtown Dayton is “imminent,” a co-founder said late Tuesday.
Exterior signage was erected Tuesday morning, the kitchen was preparing some test dishes, and workers were making final preparations Tuesday afternoon. One of the final steps involved painstakingly scraping adhesive signs on a window near the entrance that still read, “The Wine Gallery” — the wine bar and cafe that operated for more than eight years in the space at 5 W. Monument Ave. at North Main Street until it shut down in early May.
Bar Granada will be part Spanish deli, part European Cafe, according to co-founder Paul Pelnar. The bar has posted its full menu on its web site, although Pelnar cautioned that the bar would serve a limited menu of croquetas hot and cold tapas in its initial few weeks of operation before introducing its special plates of the day and charcuterie selections. The drinks focus will be on beers and wines, and will later expand to include cocktails.
“We’re stepping into it,” Pelnar said of the tapas bar’s “soft opening,” which will happen after some final permit and checklist items are completed.
Grand opening-style events are being planned for early-to-mid December, the bar-restaurant’s co-founder said.
Bar Granada’s hours will be 3 p.m. to 11 p.m. Tuesday through Thursday, 3 p.m. to midnight Friday, noon to midnight Saturday, and noon to 6 Sunday. It will be closed on Mondays.
“For those who have been to Spain, we are aiming to remind you of that experience,” Pelnar said earlier this year, when the tapas bar launched its build-out. “We are bringing in the flavors of a traditional Spanish kitchen,” including garlic, tomatoes, olive oil, fresh seafood, Iberico ham, house-made Sangria, and Spanish beers.
Pelnar said he was a frequent customer of the Wine Gallery and admired the building, with its European-style arched windows views of the river, even before it became available.
“We want to give this space back to Dayton, in a meaningful way,” Pelnar said.
