Comments: Box of raw hamburger patties stored above ready to eat food items, in breakfast refrigeration unit, discontinue this practice to prevent cross contamination. Raw meat shall be stored below other food items, rotate storage as needed.
Bag of sliced tomatoes, found in pizza preparation refrigeration unit, was discarded in trash due to a expired discard/date mark of 9/15. Once sliced, tomatoes are considered a time/temperature controlled for safety food item. Sliced tomatoes shall be used or discarded within 7days to limit pathogen growth.
Roaster/crock pot full of meat and liquid, observed in the breakfast preparation area, and dirty tongs, were found in the cafe hand washing sink, per employee, no food preparation has occurred today. Food contact surfaces and utensils shall be cleaned and sanitized after use to remove food material and limit pest attraction.
Nonfood contact surfaces found to be dirty, equipment surfaces shall be cleaned daily to remove food and limit pest attraction.

Comments: To limit pathogen, ensure ready to eat and left-over time/temperature controlled for safety food items, stored under refrigeration for longer than 24hours, are equipped with a 7-day discard date. Upon expiration of the 7th day any remaining food item must be discarded. 2gallons of chicken chili were discarded due to containing a preparation date of 10/5. Five slices of bologna were discarded were discarded in the trash due to containing a sticker stating pulled 9/1.
Provide a protective shield or a shatter resistant light bulb to the refrigeration unit, located between the kitchen and the service line, to protect food items stored within from hazards associated with the bulb shattering.

Comments: Observed outside of coffee creamer machine with build-up of food residue. Ensure all coffee equipment is cleaned and maintained so that it is free of build-up.
Observed multiple hand sinks not supplied with paper towels. Ensure all hand sinks are supplied with soap, hot water, and paper towels in order for proper hand washing to
occur. Person in charge (PIC) placed paper towels at each hand sink during inspection.
Observed floors near and under water heater with build-up of dirt and mold. Ensure floors are cleaned and maintained more frequently in order to prevent build-up.
