Dayton Racquet Club hires new executive chef

The Dayton Racquet Club has hired Joe Fish as its new executive chef, the club’s general manager, Kevin Round, confirmed this morning.

Fish, who served as executive chef of the now-defunct Pacchia in the Oregon District, has operated The Chef’s Case in the 2nd Street Market in downtown Dayton and most recently served as head production chef at the University of Dayton. He is a graduate of the Culinary Institute of America and Kent State University, and has experience in resorts and hotels in California and New York City.

Round said Fish’s education, experience, personality and skill in the kitchen made him a strong fit for the job.

Fish said this morning that his new position is the culmination of his training, since it will encompass several facets: fine dining, lunches, special events and banquets. “It’s a great facility, with a great view, and it was unlimited potential,” Fish said of the Racquet Club.

The Chef’s Case will remain open at the 2nd Street Market, Fish said.

Fish replaces Jack Skilliter, who stepped down because he is seeking to open his own restaurant in the Dayton area. The 1,100-member Dayton Racquet Club is located atop the Kettering Tower at 40 N. Main St. in downtown Dayton.
