Patrick Murty, owner of Company 7 BBQ in Englewood, prides himself on knowing how to slow-cook good barbeque. Murty, a volunteer firefighter, started the business with his family of firefighters.

Heading into Memorial Day weekend, he gave us five tips on how to perfect the art of smoking meat.

It's all about timing. With barbeque meats, there's a lot of time involved if you want to turn out a well-smoked meat. Murty said Company 7 cooks its barbeque for 12-to-18 hours — making the meat tender and full of flavor.

Keep the meat warm. Waiting to serve meat? Make sure it doesn't get cold before guests arrive. Murty recommends putting meat in a simple cooler, wrapped in foil and towels. It will keep your meat at the right temperature for 2-3 hours, he said.

Food safety is important. Now that the weather is getting hotter, it's important to keep ice on meats and foods that need to stay cold. Meats will spoil fast if left outdoors during a party.

Save time cleaning. If you're cooking with raw meat, use disposable cutting boards and throw them out after a single use to avoid foodborne illnesses. It's easy and quick to move on to your next cooking task, too.

BBQ is about family and friends. Murty said he'll spend Memorial Day cooking out with family and friends. His business was built on family values, and he encourages customers to spend the day with good food and better people.

Company 7 BBQ is located in Englewood on 1001 South Main St. It will be open Saturday and Sunday this weekend, but will close for Memorial Day.
