Health Inspections: Applebee's Neighborhood Grill & Bar

Date of inspection: Oct. 4

Violations: PIC unable to provide a procedure, proper PPE and disinfectant that goes with the vomiting/diarrheal kit. Provided PIC with handouts to assist.

PIC was unable to show in a verifiable manner that staff was trained on the employee health policy as well as the 13 reportable illnesses. Gave staff a handout to assist.

Found cooked onions in oil cold holding at 45 – 46F. PIC voluntarily discarded the product and it was discussed to place less quantity in the tray held below the grill line to keep the product cooler.

Found a cracked lexan pan and a lid chipped that was holding food. Containers shall be discarded once they become cracked or chipped to prevent contamination to the product. PIC discarded.

Found the door to the walkin refrigerator not self closing, leaving the door partially open. Repair to self close tightly. Found one door to the make table at the cooks line not closing all the way. Discussed with PIC.

Found no paper towels at the hand sink by the prep area. PIC corrected.

Found several areas in the kitchen and prep area that did not supply sufficient lighting. Areas where cutting, prepping, grilling, frying are done must be illuminated with 50 ft-candles. Discussed with Pic and she will look into the new type of lights and increasing wattage under the hood. Found the traulsen cooler without a light. Install a light bulb to assure proper light.

Found loose eschucians behind the water lines at the hand sink in the prep area. Seal these to the wall.

Clean the hand sink and the walls around the sink in the prep area of grease splatter. Clean the top of the automatic dish machine of food debris.

Comments: Discussed new rules and gave PIC handouts.

Discussed coming up with a standard color coding for the tongs at the grill area. All staff should assume the same color tong for the same raw product.
