Violations: Observed food stored in the walk in cooler uncovered. Cover foods in the walk in cooler to prevent possible contamination. Some condiments were uncovered in the dry storage as well. Always cover all foods in the dry storage or in the walk-in cooler to prevent cross contamination.
All foods that are prepared in the facility and not used within 24 hours shall be date marked with date of preparation or use by date. No dates observed on all the foods in the walk-in cooler.
After cleaning all food contact surfaces, be sure to wipe with a sanitizer cloth from a sanitizer bucket or use a spray bottle with sanitizer to spray and wipe food contact surfaces.
Mold is now building behind the dish spray area and behind the utensil wash sink. Reseal all these areas as needed after removing all the molded silicone.
The tiles on the floor in the dish room are loose and grout is out in most of the dish room floor.
Replace broken tiles and regrout as needed.
Comments: Correct above violations for reinspection in one month.
