Violations/comments: Observed employee drinks being stored near prep area on shelving with other food equipment next to entrance to kitchen. Corrected during inspection. In-use utensils are improperly stored. Observed plastic scoops being stored inside soups in walk in cooler. Observed improper storage of damp wiping rags. Wiping rags were laying directly on surface of cooler. Equipment and or components not maintained in good working order. Observed faucet on top of three compartment sink to be leaking water. Observed ice holder bin under drink dispenser next to ice machine accumulating a lot of condensation and dripping under cabinet. Observed cutting boards heavily scored and scratched in front of prep coolers toward front of kitchen. Observed re-use of single service containers to hold a large amount of sauces for wings. Observed mold on inside of ice machine toward the back of the kitchen area. Non-contact surfaces of equipment are dirty with food residual build up on handles of walk in cooler toward back of kitchen area. Observed forks being stored inside open cup container with handles down. The plumbing system not properly maintained. Grease trap under table next to dishwasher had odorous smell. Observed no towels or hand-drying device at hand washing sinks in back of kitchen and under bar counter. Observed standing water on floor behind ice machine. Debris and food residual build up on floor underneath dishwasher. Mops being dried using unapproved method. Observed personal care items stored on racks next to food contact equipment and containers.
