CHUNKY MONKEY COOKIES

INGREDIENTS
2 cups flour
1 teaspoon baking soda
1 tablespoon cornstarch
1 teaspoon salt
½ cup (1 stick) unsalted butter, softened
2 ripe bananas, peeled
1 cup brown sugar
¼ granulated sugar
2 teaspoons vanilla
1 cup mini chocolate chips
1 cup chopped walnuts
DIRECTIONS
1. Preheat oven to 375 degrees Fahrenheit.
2. In a mixing bowl, mix flour, baking soda, cornstarch and salt.
3. In a separate bowl, cream butter, bananas and sugars until they are light and fluffy. Add vanilla and mix together. Stir in flour mixture and mix just until combined. Stir in chips and walnuts.
4. Refrigerate dough for 30 minutes.
5. Scoop out cookie dough with a cookie scoop and place onto a cookie sheet lined with parchment paper or silicone baking mat.
6. Bake for 10 minutes or just until they begin to brown slightly on top. Remove from oven and cool completely on the cookie sheet.
