Cooper's Hawk Winery & Restaurant — which has a location in Liberty Center in Butler County as well as two other restaurants in Cincinnati and Columbus — is considering building a restaurant in the Dayton-area market.
When asked whether a new Cooper’s Hawk Winery & Restaurant may be coming to the Cornerstone of Centerville development, Cooper’s Hawk Marketing Manager Ami Vanderhoof emailed the following reply:
“From what I understand, we have not yet signed any contracts or agreements — we do like the community, and are exploring options, but at this time nothing is signed.”

Earlier this month, Centerville City Council members unanimously approved changes to the final development plan for the Phase III Cornerstone North project near the Interstate 675-Wilmington Pike interchange, allowing for an unnamed “new user” to build there. At the time, officials with Oberer Development, developer of Cornerstone, declined to disclose details of the unnamed new user.
Messages left with Oberer officials this morning, Thursday May 31, have not been returned.

Andrew Rodney, the city of Centerville’s planning and zoning administrator, said this morning that the city has not received any applications regarding the Phase III Cornerstone North project “from Cooper’s Hawk or anybody else,” and he deferred questions about prospective tenants there to Oberer officials.

If a deal is signed, it would mark another significant retail win for Cornerstone of Centerville, which has shown a knack for attracting restaurant chains that are new to the Dayton-area market.

Cheddar’s Scratch Kitchen, Bagger Dave’s Burger Tavern, Panda Express, CoreLife Eatery, and, most recently, Which Wich Superior Sandwiches chose Cornerstone of Centerville to make their Dayton-area debuts. MOD Pizza announced plans to open its first Dayton-area location in Cornerstone, but ended up opening an Englewood location before its Cornerstone restaurant.

The Cooper’s Hawk restaurants are large operations. Cooper’s Hawk officials said prior to opening their Liberty Center location in 2016 that they were planning to hire as many as 200 people to staff the restaurant.

Founded in Orland Park, Ill., in 2005, Cooper’s Hawk now has more than two dozen locations nationwide. Each Cooper’s Hawk includes an upscale casual dining restaurant, full-service bar, private barrel-aging room, and Napa Valley-style tasting room and retail gift store.
