The new appetizers and salads were created by José Calzada, Dayton History food and beverage director. They include:
- Carillon Brewers Sampler: a large Bavarian-style soft pretzel is topped with a colorful array of assorted cheeses, slices of the restaurant's wursts (sausages such as mettwurst and bratwurst), cornichons, pickled beets (roasted and pickled in-house), all served with two mustards and beer cheese ($13.95);
- Braunschwiger (Liver Sausage Spread): A poor-man's foie gras, served with house-made crackers and bread made from grains utilized during the brewing process ($6);
- Bier Cheese Fries: Potato wedges topped with house-made beer cheese, bacon crumbles and chives ($7);

- Oven Roasted Bone Marrow: Yes, it IS a pile of bones on a plate, but those bones have been roasted and halved lengthwise to expose the rich and decadent cooked marrow within. Served with bacon jam and toast points. (Dayton History CEO Brady Kress points out that bone marrow was an important dietary staple in the 19th century) ($10);

- Beet & Arugula Salad: Boiled (but not pickled) beets, arugula, red onion and walnuts topped with a warm, gooey, crispy-on-the-outside chunk of breaded and fried goat cheese ($9);
- Quinoa & Spinach Salad: Served with cucumber, tomatoes, red onions and fresh mozzarella ($9).
Several appetizer favorites were retained on the new menu, including German Soft Pretzel Braid ($6.50) and Sauerkraut Balls ($8).

The brewery and restaurant serves a half-dozen sandwiches, from Reuben ($10.95) to Grilled Portabella Mushroom ($10); entrees such as Schnitzel ($14), Grilled Atlantic Salmon ($19), Herb-Roasted (and marinated in ale) Split Chicken ($17); and Fish and Chips ($14); as well as several variations and options of its Wursts (Bratwursts, Mettwurst, Hot Link and Frankfurter). Soups and desserts are also available.

Calzada’s plans call for hosting four or five special beer-and-food pairing events a year and a similar number of wine-and-food pairing events, Dayton History officials said.

Carillon Brewing Co. is the only production brewery and full-service restaurant operating inside a museum in the U.S., according to the non-profit Dayton History organization.
