Violations: Observed garlic sauce with labeling stating to "keep refrigerated," sitting out of refrigeration. Ensure all TCS food items maintain a temperature of 41F or below to prevent potential bacterial growth or provide documentation from manufacturer of the product or a variance that this food item does not need to be kept refrigerated. Place garlic sauce in cooler.
Observed pest droppings in the back area of facility. Provide pest control to limit pest activity.
Comments: PIC stated that the sanitizer dispenser at the three compartment sink needs repaired. Until repaired, ensure sanitizer is sanitizing at the proper concentration.
Discussed pizza sauce containers sitting out of refrigeration for use on make line. Refrigerate or provide documentation that states pizza sauce does not require refrigeration.
Observed acceptable food temperatures during visit.
Overall, observed good date marking in the walk-in cooler.
