Local woman’s apple cake won online recognition

Teacher, a mother of 3, shares the recipe.

Sometimes the saddest events result in the happiest memories, at least that was the case for Lisa Brookey Glass, an award-winning baker from Englewood, who remembers sharing delicious pieces of Kentucky Apple Cake with her family at her mother’s funeral.

“My mother [Rose Mary Brookey] was famous at Meadowdale High School for her baking,” said Brookey Glass, a Meadowdale High School graduate and daughter of Meadowdale teacher, Ronald Brookey. “She would send things in with my Dad and became especially famous for her homemade pies and her noodles made from scratch. I think cooking is another way of showing affection for others; a way of communicating. It’s like a common language for us.”

Brookey Glass grew up learning to cook in the kitchen with her mother and at the age of 10 even took cooking classes at the urging of her mother.

Despite being a busy mother of three and teacher at Monticello Elementary School in Huber Heights, Brookey Glass is an active member of Just a Pinch Recipes (www.justapinch.com), a new free online social community created for and by cooks.

She recently received a blue ribbon award for her posting of the recipe for Kentucky Apple Cake.

“I always think of my mother when I make this cake, and it makeS me feel warm,” said Brookey Glass, who connects with other bakers and cooks at the online site and says she is honored to be part of the 2 percent of the 12,000 recipes posted awarded a blue ribbon. “You post your recipe and then people can try it and comment on it. The website even has a test kitchen where they make up some of the recipes. I have friends in different states and get comments from people in foreign countries, who ask about substitutions and measuring conversions.”

BLUE RIBBON RECIPE — KENTUCKY APPLE CAKE

Ingredients

For the cake:

1 cup margarine — can substitute with butter

2 cups sugar

2 large eggs

2½ cups all-purpose flour

2 tsp baking powder

1 tsp baking soda

1/8 tsp salt

2 tsp cinnamon

3 cups apples — chopped finely

1 cup chopped walnuts

2 to 3 Tbsp milk

Directions:

Grease and flour a 9-inch-by-13-inch pan and preheat oven to 350 degrees.

Cream margarine and sugar.

Add 2 eggs and beat.

Combine flour, baking powder, baking soda, salt and cinnamon in a separate bowl.

Mix dry ingredients into creamed mixture to make cake batter.

Add chopped apples, walnuts and milk to batter.

Spread batter evenly into pan and bake at 350 degrees for 50 to 60 minutes until done.

For the glaze:

3/4 cup sugar

½ cup margarine

¼ cup buttermilk

1 Tbsp light corn syrup

¼ tsp baking soda

1 tsp real vanilla extract

Directions:

Combine all of the glaze ingredients, except for vanilla, in a sauce pan and heat to a rolling boil while stirring.

Remove from heat and add vanilla.

Pour and spread glaze over the cake immediately after removing it from the oven.

Cool before serving.
