Carroll and a partner developed the Georgia Renaissance Festival which opened in 1986 and is now in its 32nd year.

In 1988 Carroll sold his interest in the Georgia Festival and purchased 190 acres in Harveysburg, Warren County. There he established the Ohio Renaissance Festival, now in its 28th year. In 2014 he sold the festival and real estate and retired to his home in Indian Hill.
