Owners Greg and Melanie Zemore purchased the wine bar in April and have made improvements, including the installation of a new 26-foot bar in recent months.
And more improvements are on the way: Greg Zemore — who was trained at the Culinary Institute of America in Hyde Park, New York — will be submitting plans this week for a renovation project that includes a new kitchen. If plans are approved, the project would allow Zemore to expand the bistro’s seating from its current 38 to about 50.
The menu will expand slowly, Zemore said, and will include seafood, steaks, pasta dishes and salads on a menu that will change seasonally and will include bi-weekly specials. Plans call for completing the project by the end of March.
The wine bar and retail wine sales will remain key components of the new Zemore’s. The tasting bar will continue to have a rotating selection of three red and three white wines. Plans call for hosting more winemaker and winery-representative special events, Zemore said. The wine shop also offers a wine club in which participants can choose from among three tiers and receive selected wines each month.
Zemore has served as general manager of the Der Dutchman restaurant in Waynesville and also served in several positions, including general manager, for Marriott Hotels.
The space occupied by Zemore’s — in a retail shopping center near Ohio 725 and Wilmington Pike — has operated as a wine bar since 1999, when it opened as Cindy’s Wine Cellar.
