“We were kind of laughing about it,” said Marci Johannes, who will serve as manager of the new tavern.
Baarlaer said Mr. Boro’s Tavern could open in late April or May.
“We’re bidding out the construction now, and we’ll probably start in about a month. I think it’s a three-month project,” Baarlaer said.
The new tavern will seat about 80 inside and will employ an estimated 10 to 12, Baarlaer said. It will spotlight craft beers, including Dayton- and Cincinnati-area breweries’ selections, he said.
The menu will have eight to 10 items, mostly sandwiches, salads and pizza. “We won’t be trying to compete with all of the other restaurants down here,” Baarlaer said.
Johannes, whose child attends Springboro schools, said the new tavern will work to connect to the Springboro community, and the former wine bar’s favorable location along Ohio 741 was a factor in signing a lease for the space.
Baarlaer said, “We’re aiming for a neighborhood tavern kind of atmosphere.”
The space had housed a wine bar/pub/wine shop for more than 15 years. A wine bar called Mulligan’s Wine & Stuff opened there in 1998. The wine bar went through ownership and name changes, becoming Grapes of Ruth and ultimately Bella Vino, before shutting down in June 2015. A second Bella Vino location in West Chester remains open.
