Date of inspection: March 15
Violations: Found containers of salad, wings, potatoes in reach in coolers not covered to protect from contamination. PIC had staff provide lids or covers.
Found a stirrer/paddle at the cooks line stored on top of a trash receptacle. PIC removed and sent through the dish machine. Provide a hook or clean dry surface for the storage of the paddle.
Found the interior to the make table door cracked with possible loose plastic from door interior able to contaminate food. (Keep all food covered until repair/replacement can take place.) Found burger domes heavily soiled with grease build-up and burnt on food pieces. PIC discarded to prevent contamination. Found a piece of loose plastic wrap in the raw chicken bin, PIC removed.
Found a cracked and chipped cambro holding shredded cheese in the walkin. Discontinue use of chopped food containers to prevent contamination. PIC removed and transferred food. Found new beverage syrup lines ran without covering to prevent dirt from getting between the lines. Provide a means of cleaning without disassembling the lines.
Found a thermometer in the make table that was no longer able to be read as moisture buildup had accumulated inside. PIC removed and replaced with a new one.
Found many gaskets to door seals on reachin units in need of being replaced. (Bids obtained for work to be done.) Found the light inside the waitress cooler not working and needs repaired to allow sufficient light. Repair several handles to wood cabinets in dining area.
Found a container of wiping cloth solution not held at the correct concentration of sanitizer as required. Tested 100 ppm quat. PIC had the container re-mix and corrected. All other containers tested OK.
Found burger domes unclean with burnt on food debris (PIC discarded). Found two skillets hanging in the clean dish area that were not clean to sight. PIC stated they are no longer used and discarded them. Found the interior door and seals to several reachin coolers in need of cleaning to remove food splash and prevent contamination. PIC had staff working on cleaning the items during inspection.
Found the interior to 2 microwaves soiled with food splash. PIC had staff cleaning during inspection.
Found many clean metal pans wet nesting with water pooling inside as they were not allowed to air dry before stacking. PIC sent the pans back through the dish machine and will speak to staff about allowing them to air dry completely.
Found the handsink in the waitress station with a damp cloth and silverware in it. Handsinks may only be used for handwashing and shall not be contaminated by storage of soiled items. PIC removed the items and corrected.
Found the condensation line in the walkin refrigerator not covered to be easily cleanable. Provide a smooth, nonabsorbent, cleanable surface to allow for daily cleaning. Found the fill spout not being used over the handsink in the kitchen to not be cleanable. Discussed removal of the attachment.
Found the interior to the waitress station reachin cooler without a working light. The bulb continues to blow. Repair the unit to allow for 20 foot candles of light.
Repair the gap between the wall boards and in the bar area to prevent entry for insects. Remove and re-caulk around the ice cream cooler, dish machine, wall behind waitress station and other areas noted as needed to provide a smooth surface to clean.
Regrout the floor tile under the waitress station area and floor drains. (PIC stated the work should be done tonight.) Repair the loose wall board underneath the spray area of the dish machine to provide a tight seal and not allow entry of insects or food debris.
Clean the following areas more thoroughly: Underneath the dish machine, and wall adjacent to the spray area, wall by the wonton storage, grease fill line and sprout by the fryers, door seal to the walkin beer cooler and other reachin coolers of mildew growth.
