Violations: Equipment food-contact surfaces or utensils are dirty. Blades of produce dicer and wedger have food debris remaining on them. Items cleaned during inspection. To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch.
Observed a build-up of dirt and debris. Wall and ceiling near wing spinning station is dirty. Floor in some areas, particularly underneath and behind equipment and shelving, is dirty. The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
Observed the presence of dead pests or insects. Fly strips in rear of facility are full and should be discarded. Dead or trapped birds, insects, rodents, and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.
Comments: Received a complaint that a customer visited the facility on January 28, 2017 around 5:45 pm and some people in their group became ill at around 11:30 pm with symptoms of vomiting, stomach pains and diarrhea after eating boneless buffalo wings with medium, sweet bbq and mild sauces. Per manager, boneless wings are received frozen and raw. Wings are fully cooked in fryer and are held hot for as long as they are cooked (8 minutes). Boneless wings in drawer warmer at time of inspection were holding at 181F. Walk-in freezer where boneless wings are stored are at proper temperature. Sauce spinning buckets are cleaned at least every 4 hours. Fryer oil is changed daily, or at most every other day. Employees knowledgeable in proper procedures as mandated by the facility. Asked that managers reinforce cleaning, handwashing and single-use glove procedures with employees.
A standard inspection was conducted at this time.
At time of inspection all food checked is at proper temperature. Good.
