Health Inspections: Dr. Doodles

Violations: Observed half & half and butter being held cold, inside walk-in cooler, above 41F. Ensure foods are held cold at or below 41F in order to limit the growth of bacteria.

- PIC was informed to remove all perishable foods from walk-in cooler and place them into another working cooler.

- Butter- CH- 46.0F

- Half & Half- CH- 48.0F

Observed inside of large ice machine and soda gun (near bar handsink) with build-up of food residue. Ensure each are broken down (if needed), washed, rinsed, and sanitized frequently so that they are free of build-up and contamination is prevented.

Comments: PIC explained that hot dogs, brats, and pretzels are prepared for patrons during game days. PIC also informed that customer shall pay for a beverage in order to receive foods.

PIC was informed that food license for the facility shall be upgraded to a level 3 from a level 2. PIC was informed to ensure handsink is supplied with soap, hot water (minimum of 100.0F), and paper towels.

Quaternary ammonia tablets were observed available for use at three compartment sink. PIC was informed to ensure quaternary ammonia sanitizer test strips are obtained.

- Quaternary ammonia- minimum level of 200ppm

PIC was also informed to ensure a probing food thermometer is obtained for the facility.

A re-inspection shall occur 04/10/2017 or thereafter.
