Violations: Found raw ground turkey and chicken stored over raw beef in the meat cooler. PIC corrected and will discuss with staff the possibility of cross contamination.
Found raw shelled eggs stored over ready to eat products on the end cap by dairy. PIC will correct and remove the raw eggs to prevent contamination.
Found duct tape on the wall to the meat room by the grinder. PIC removed duct tape and will clean the wall of adhesive to prevent bacterial growth. Found mildew along the bottom grates and shelving in the retail orange juice area. Clean of mildew. Found mildew along the honeycomb shields in the refrigerated nutrition and orange juice area.
Found missing thermometer in the hot holding deli case and the mobile rotisserie.
Found the build in thermometer in the mobile rotisserie not accurate at 75F.
Found that fully cooked ham products display the meat label for safe handling. This misrepresents the fully cook items and the safe handling label must be removed. Discussed with PIC.
Found a lid to a cambro in the bakery cooler chipped and cracked. PIC to discard.
Found two carts of cut salad, spring mix, greens, cauliflower at room temperature in the holding area temped at 52-54F. Discussed with PIC that these need kept <=41F. PIC placed in cooler to cooler to
Found the center rinse bowl with dirty pans placed in it during the 3 step warewashing process. Discussed with PIC that the rinse bowl shall remain clean and sanitized during the warewashing process to prevent contamination. Do not allow employees to place soiled dishes here.
Found no handwashing signage in the mens restroom.
Found a light fixture out or in need of repair in the click-it freezer. Found a light bulb out under the chicken fryer hood. Repair/replace.
Repair the hand sink in the meat cutting room to seal properly to the wall. Caulking is coming loose and gap is >1/4 inch.
Repair the broken hinges on freezer doors in aisle 19 (or as indicated during inspection).
Clean more thoroughly the ceiling exhaust vents in the deli, the hood vent in the bakery ovens, behind and under the end caps on the retail floor where dust and dirt have accumulated. Clean more frequently the trays under retail display in the dairy, biscuits, yogurt and milk coolers of spillage and food debris.
