Violations: Observed food that was not properly protected from contamination by separation, packaging, and segregation. Observed packaged pork loin on top of bag of packaged cabbage. (Pork had just been placed in the refrigerator and was moved at the time of inspection.) To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.
Comments: Please watch storage of foods in the refrigerator and store them according to cooking temperature. (Lower temperatures on top – higher cooking temperatures on bottom)
