Violations: Label all bulk foods once removed from original packaging. PIC labeled flour.

Found many soiled linens stored on food contact surfaces. Discussed with PIC to store in sanitizer or placed in the dirty linens.

Found very soiled hot pads throughout the facility that could cause contamination when used to remove food. Discussed with Pic to launder more frequently.

Found the hood system at the grill-fryer area was visibly soiled with grease buildup and is allowing grease to collect on the exterior of the hood front. This indicates that the filters are either overloaded or are not pulling properly to remove grease. This could cause a safety hazard. Discussed with PIC.

Found the gaps between the walls and internal pieces of the hood system require caulking to prevent grease from entering behind the unit or drippage from occurring.

Found the removable filters in the bakery hood soiled with flour. Clean more frequently. Found the exterior to the hood by the fryers soiled with grease and dust accumulation. Clean.

Found the facility does not have a means of measuring the temperature of the rinse cycle in the high temp dish machine.
