Violations: Found the facility did not have an employee trained in level two food service. Gave PIC handouts.
Found the facility did not have a procedure or essential protective equipment for vomit event should it occur. Gave PIC handouts to assist.
Found bulk foods stored in containers with no name. Label foods with common name.
Found TCS foods in the walkin holding at 54F. The following foods were discarded in the dumpster:
3 40 lb cases of raw chicken wings
1 10 lb bag raw chicken wings
1 40 lb ribeye – raw
10 lb raw hamburger
15 lbs cooked prime rib
5 lb raw bacon
PIC moved all other TCS foods just delivered to the two working units in the prep area to hold
Found the walk in freezer door unable to work properly. Keep door closed once refrigeration unit is repaired. Found the gaskets to the make table in poor condition. (gaskets on order)
Found the sanitizer in the automatic dish machine not properly dispensing. Utilize the 3 compartment sink until GFS adjust the chlorine.
Found the interior parts and top to the dish machine soiled with food debris. Clean the dish machine and parts daily.
Place a thermometer in the walkin to assure it can maintain
Found the interior doors and shelving to the make table in need of cleaning. Found the interior to the upright freezer in need of defrosting and cleaning of food debris.
Found the interior to the ovens soiled with grease buildup. Clean on a daily basis to remove grease.
Found the hand sink in the kitchen dripping. Repair.
Found no handwashing signage in the mens or womens restroom.
Found light out over the make table. Provide sufficient light in this area of 50 ft candles.
Clean walls and ceiling tiles adjacent to the hood system of grease buildup.
