Centerville restaurant to reopen under new name

CENTERVILLE — The former Savona Restaurant & Wine Bar at 79 S. Main St. (Ohio 48) — closed since March 14, when a crash sent a car careening through an exterior wall — is poised to reopen Tuesday with a new name: The Twisted Root Restaurant.

Keith Taylor, the chef and driving force behind Savona, and his wife Jenifer will be the sole owners of Twisted Root, which will have a slightly more casual concept — no more white linen tablecloths — and a revamped menu. Some of the favorites from Savona, including the Seared Ahi Tuna “Nachos” and Brie Flatbread with applewood-smoked bacon, apples, spinach and balsamic glaze, will be retained, Taylor said. New dishes will include Chicken & Waffles, Grilled Shrimp Cocktail and Fried Green Tomato Salad.

Taylor has hired a chef de cuisine, Pete Zorotovic, so he can be more visible in the front of the house. The new hire will also accommodate the restaurant’s expansion into catering and hosting special events, Taylor said.

Twisted Root will open with 14 employees, including several holdovers from Savona, Taylor said. It will seat about 80 people. Taylor is developing a craft-beer list and a bourbon list to complement the restaurant’s wine list. Local artists will display their work on the restaurant’s walls, and Twisted Root will source many of its ingredients from local growers, Taylor said.

When it opens this week, Twisted Root’s hours will be Tuesday through Thursday 5 p.m. to 9 p.m., Friday and Saturday 5 p.m. to 10 p.m., closed Sunday and Monday. Taylor said he is considering expanding hours to include lunch service, perhaps later this year.
