BIBIBOP plans to open second Dayton location this spring

New eatery will be located in the Cornerstone of Centerville development

** UPDATED Feb. 19, 2020 — Bibibop Asian Grill plans to open its second Dayton location at The Cornerstone of Centerville Development tentatively in late March, Bibibop spokesman Jason Whitt said.

The restaurant will be located at 5225 Cornerstone North Blvd., in the Cornerstone of Centerville space that previously housed MOD Pizza, which shut down in September 2019.

Bibibop offers a fast-casual, build-your-own service concept similar to Chipotle. Diners choose from purple or white rice for their bowl, or have their dish prepared as a salad or wrap, then select from chicken, beef or tofu, and then top their dish from a variety of vegetables and garnishes.

The Cornerstone of Centerville development — which has proved in recent years to be a magnet for restaurant chains making their debut in the Dayton area and which will celebrate another high-profile opening this week — has more restaurant space coming, and one of those spaces will house the Dayton area's second location of Bibibop Asian Grill.

The new restaurant coming to 5225 Cornerstone North Blvd. is scheduled to open during the first quarter of 2020 “most likely February,” Bibibop spokeswoman Betsy Wright told this news outlet today.

“Our three locations in the Cincinnati/Dayton area have performed very well, and our expansion plans include two new Cincinnati-area locations scheduled to open next month, and, of course, Centerville, which will open in early 2020,” Wright said.

Bibibop opened its first Dayton-area restaurant at 1200 Brown St. near the University of Dayton campus in December 2016. By the end of the this year, the chain will operate at least 35 restaurants nationwide, and another 10 to 15 are planned for next year, Wright said.

Bibibop Asian Grill was founded in Columbus in 2013. Its distinctive name is derived from the popular Korean dish, “bibimbap,” which translates into “mixed rice.”

The chain’s restaurants operate with a fast-casual, build-your-own service concept similar to Chipotle. Diners choose from purple or white rice for their bowl, or have their dish prepared as a salad or wrap, then select from chicken, beef or tofu, and then top their dish from a variety of vegetables and garnishes, from pickled daikon radish to sesame kale to kimchi.

Among the restaurant chains that chose Cornerstone of Centerville to make their Dayton-area debut include Cheddar’s Scratch Kitchen, Bagger Dave’s Burger Tavern, Panda Express, CoreLife Eatery, Which Wich Superior Sandwiches, and, as of this coming Monday, Aug. 26, Cooper’s Hawk Winery & Restaurant.
