Violations/comments: The person in charge was unable to demonstrate knowledge of food safety and prevention. Manager could not state proper hot holding temperature. Observed roller grill items not hot holding at proper temperature. TCS foods were not held at proper temperature. Observed freezer and cooler unclean. Non-food contact surfaces of equipment are unclean. Observed no supply of hand cleaning liquid, powder or bar soap at the hand washing sink(s) in restroom. Observed walls in food prep area or vent area that needs cleaned of residual build up. Observed a build up of dirt and debris on floors in food prep and back area. Observed restroom that was not clean.
