Violations/comments: Observed improper storage of food items. Boxes of chicken stored in the walk in freezer had ice from the condenser above. Remove all food from this area until unit can be repaired. Equipment and/or components are not maintained in good working order. Repair walk in freezer condenser to prevent water dripping onto food stored below. Replace the missing cover tile by the mop sink. Observed a build up of dirt and debris on wall behind slicer in the back prep area. Water pooling and slight mold build up inside light shields within the walk in cooler. Upon arrival, significant amount of equipment was being removed and replaced. In addition, the dining room and restrooms will be remodeled starting Aug. 1. As required, plans must be submitted to and approved by the Health Department prior to any alteration of a food service operation. Please contact Miami County Public Health for plan review packet.
