Date of inspection: Nov. 16
Violations: Observed employee foods and drinks stored on raw chicken prep table. Ensure employee drinks and foods are stored separate from or below customer foods, utensils, single service items and food prep tables in order to prevent contamination. Food and drinks were removed from area.
Observed foods being stored on floors of walk-in freezer and cooler. Ensure foods are stored a minimum of 6 inches off of floors in order to prevent contamination.

Observed chocolate milk being held cold above 41F in small reach-in cooler (near drive-thru window). Ensure foods are held cold at or below 41F in order to limit the growth of bacteria.

- PIC was informed to remove all perishable foods from cooler and place them in another working cooler. PIC removed milk and whipped cream from cooler.
Observed build-up of food residue inside multiple coolers. Ensure inside of coolers are cleaned more frequently and maintained so that they are free of build-up.

Observed build-up of food residue in drain and on floors under three compartment sink. Ensure drain and floors are cleaned more frequently and maintained so that they are free of build-up.
Observed sanitizer bucket and spray bottle being stored above clean pans. Ensure chemicals are stored separate from or below foods, single service items, food prep tables, and utensils in order to prevent contamination. PIC removed chemicals from area.
Comments: Spoke with PIC concerning cleaning frequency and food contact surfaces. Food contact surfaces shall be broken down (if needed), washed, rinsed, and sanitized after use or every 4 hours, if they are used throughout hours of operation.
Observed handsinks supplied with soap, hot water, and paper towels.
A re-inspection shall occur 11/23/2016 or thereafter.
