Violations: Observed no test strips available for the sanitizer in use (chlorine). Provide test strips for the sanitizer in use to ensure the sanitizer concentration is correct (50-100ppm for chlorine).
Observed build-up in the following areas:
1.) Cart next to fry station
2.) Underneath flat top grill
3.) Floor underneath and wall behind fry line
4.) Handles and gaskets of cooler equipment
Clean and maintain to prevent potential contamination.
Observed build-up on hood filters above the fry line. Clean and maintain to prevent potential contamination.
Comments: Observed coleslaw, macaroni salad, and raw chicken wings holding at 38F, 39F, and 39F, respectively.
PIC has not received Level 2 certification in food protection as of today’s visit. Ensure Level 2 certification is obtained.
Discussed clean up procedure and verifiable manner in which employees must report foodborne illness to PIC during visit.
Discussed handwashing and glove usage with PIC.
A follow-up inspection will occur on 5/30/2017 or shortly after.
