Violations: Person in charge did not ensure that employees are informed in a verifiable manner of their responsibility to report information about their health. PIC not able to locate verifiable employee health policy. Spoke with PIC and they were knowledgeable in the employee health policies. To prevent transmission of foodborne illness, the person in charge shall ensure that food and conditional employees are informed in a verifiable manner of their responsibility to report information about their health as it relates to diseases that are transmissible through food.

Comments: Received complaint that two individuals purchased sandwiches two days in a row, June 6-7th, 2017, from cafe. First sandwich was Italian sub, second was chicken teriyaki. Both complainant and her granddaughter became ill on the evening of the June 7th, which continued into the following morning. Complainants did not seek medical attention.

All sandwiches at the cafe are made to order. Both the lunch meat and chicken arrive to the facility precooked and frozen. They are portioned and tempered in the walk in cooler. At this time they are date marked for 5 days. Once All cold holding units were holding well below the maximum required temperature of 41F. Hot holding (used for chicken) was holding within required ranges as well. Logs are taken twice per day of all temperatures. On both dates above, all recorded temperatures were within required ranges. PIC knowledgeable in proper food handling procedures. All employees were observed practicing proper personal hygiene/hand washing. No deficiencies were observed in food processes during inspection.

A standard inspection was conducted at this time.

Have level 2 certified employees (Scott Allen, Jonathan Conner).

Facility is clean, all temperatures within required ranges.
