Violations/comments: Repeat observation: observed employee drinks in non-designated area in walk-in cooler, corrected during inspection. Facility did not have one employee with supervisory and management responsibility and the authority to direct and control food preparation and service with level two certification in food protection. Critical violation: person-in-charge did not ensure that employees are informed in a verifiable manner of their responsibility to report information about their health. Repeat observation: the surfaces of cutting blocks or boards were severely scratched or scored and could not be effectively cleaned and sanitized. Person-in-charge stated that new cutting boards are currently on order. Observed residual build-up on the handles of the equipment. Observed no hand washing sign(s) posted at hand washing sink(s) used by employees, both in the men's bathroom and the hand washing sink right behind register.
