Date of inspection: Aug. 12

Violations/comments: Observed garlic butter at room temperatures, 67 degrees, even though container marked “Keep refrigerated.” If marked “Keep refrigerated” keep below 41 degrees at all times. Item discarded. Observed several broken food containers. All food containers must be smooth, durable and easily cleanable. Cracks and breaks provide area for bacterial harborage. The pop nozzles were very dirty and need to be washed, rinsed and sanitized.

China East

Address: 1239 E. Ash St., Piqua

Date of inspection: Aug. 13

Violations/comments: Observed working containers of food product without labels. All food items not in original container, unless unmistakable, must be labeled to prevent misuse. Containers of raw meat on walk-in floor. Keep food containers six inches off floor to prevent contamination. Observed container of rice cooling on counter. Cool food rapidly in refrigerator in shallow pans. Cool from 135 degrees to 70 degrees in seven hours; 70 to 41 in four hours. Observed crab thawing on counter. Do not thaw food at room temperature. Thaw 1) in refrigerator 2) under running, draining water 3) while cooking. Item moved to refrigerator. Items in prep unit above 41 degrees. Milk at 52 degrees, shrimp at 56 degrees. Keep all TCS foods below 41 degrees at all time. TCS foods moved to walk in cooler. Thermostat was lowered. The meat slicer and the walls in cooler need to be cleaned. The hot water heater is leaking. Plumber called to repair.

East of Chicago Pizza

Address: 1560 Covington Ave., Piqua

Date of inspection: Aug. 13

Violations/comments: The following items need to be cleaned: ceiling, single serve container, upright freezer doors, proofer interior, “clean” strainer, food containers, container holding clean utensils. There was no sanitizer dispensed in the dishwasher. Must have at least 50 ppm of chlorine to effectively sanitize. Use three-compartment sink to sanitize until repaired. Rack of soiled pizza pans sitting on top of trashcan. Do no store items where they can be easily contaminated.

Violations/comments: Observed items in the freezer case with no ingredient statement: pineapple express brats, jalapeno cheddar brats, portions of pie. All packaged food items must have correct labeling. Discussed custom butchering processes.
