Snickerdoodle Apple Pie Sandwich Cookies

Cookies:

1½ cups sugar

½ cup butter

½ cup shortening

2 eggs

2¾ cups flour

2 teaspoons Cream of Tartar

½ teaspoon baking soda

¼ teaspoon salt

Coating:

2 tablespoons sugar

1 teaspoon cinnamon

Directions:

Beat sugar, butter and shortening until mixed. Add eggs, Cream of Tartar, baking soda and salt. Beat until mixed. Slowly beat in flour. Refrigerate one hour. Preheat oven to 350 degrees. Scoop dough with small cookie scoop. Mix coating ingredients. Roll scoops in coating. Flatten slightly with glass. Bake 5-6 minutes.

Apples:

2-3 Gala apples peeled, cored and sliced

1 stick butter

1/3 cup light brown sugar

1 teaspoon apple all spice

½ teaspoon vanilla

¼ cup water

Directions: Combine all and cook in medium sauce pan on low until tender.

Filling:

4 ounces whipped cream cheese

4 ounces butter

¾ teaspoon vanilla

2 cups powdered sugar

Directions: Beat cream cheese, butter and vanilla. Beat in sugar until fluffy.

ASSEMBLE:

After cookies cool, spread filling on bottom of two cookies. Place a slice or two of apples on one side. Assemble like a sandwich cookie and enjoy.
