New distillery to open to the public this weekend in Dayton

Dayton will welcome its newest distillery on Saturday.

Hall Brothers Distillery — which has been building out its facility and tasting room since May 2019 with a goal of making and selling "the highest-quality American whiskey possible" — will open to the public for the first time this Saturday, June 6, from noon to 5 p.m. The distillery is located at 3757 Inpark Circle off Wagner Ford Road east of I-75 in Dayton.

“We are pouring samples and selling bottles,” founder Kyle Hall said. Initially, until a credit-card reader is set up, sales will be cash only, Hall said.

The young distillery’s only bottled product that is ready to sell is called "Two Stick Sourmash Moonshine," which Hall described today as “a young two-month-old, whiskey being aged inside the bottle.” Inside each bottle are two oak sticks from a used whiskey barrel from Fairboron-area distillery Stillwrights Distillery. “It’s got all the flavor of a four-plus-year-old bourbon,” Hall said.

“I will also have my first ‘American Whiskey’ barrel on the tasting bar. We’ll pull samples directly out of the barrel so everyone can have a glimpse of the things to come,” Hall said.

Hall shared his vision for the new distillery a year ago, shortly after applying for his distillery license from the state:

“Hall Brothers Distillery aims to become a small, family owned distillery. We will produce small, single batch, single barrel, pot distilled, American Whiskey,” Hall said in an email. “By using fresh local grains, and clean natural water, the expected results will be that of the fine whiskey that has been produced here since before the 1800s.”

“By maintaining small batch sizes and individual barrel bottling, Hall Brothers Whiskey will continue to offer an evolution of taste as the years go by. Like wines, I expect the flavors of my whiskey to change from year to year with repeated barrel use and ever-changing Ohio weather patterns.”

“I believe the business can offer our local market a home-grown whiskey they can be proud of.”

After the June 6 grand opening, the Hall Brothers Distillery tasting room will be open from 5 p.m. to 10 p.m. on Mondays, Wednesdays and Fridays, and from noon to 5 p.m. Saturdays.
