A precursor to the food truck was the chuckwagon, invented by a Texas Panhandle in 1866, right after the Civil War.
It was an ingenious concept -- a mobile restaurant keeping the cowboys well-nourished with tasty meats, beans and bread on their cattle drives from Texas to New Mexico.

Fast-forward exactly 150 years, and we have lots of food trucks providing delicious meals to busy people at markets and festivals, and outside of businesses.
Wheel Be Roastin BBQ is one of those food trucks. Owner Teresa Smith has extensive experience on the local culinary scene. She worked at The Buckhorn Tavern for 29 years. She told us she has a plaque for winning Best Bartender back in the 1990s.
These days, Smith focuses on smoking and grilling meats, and whipping up loads coleslaw, au gratin potatoes and old-fashioned barbecued green beans. “I do this because it’s fun,” she told us.

We asked her if she spikes those wonderful green beans. “Maybe I should,” she laughed.
Smith only uses fresh ingredients and specializes in on-site grilling. While three-fourths of her business comes from catering, Smith often works around Vandalia, such as at the farmers market, and shows up other places in the region.
Chicken breasts, fall-off-the-bone ribs and pulled pork are some of her specialties. Whatever you choose, be sure to get a side of the barbecued green beans!
